I LOVE October and it’s not just because it’s the month I married the LOVE of my life, or had my precious little man…. it’s because it’s the only time of year you can get Sam Adams Octoberfest.
Okay, those aren’t the only reasons I love October—I mean, the weather is usually pretty perfect, my Fall clothes are my most adorable I must say, the colors are gorgeous, and it’s the BEST time to be outdoors!
But, I was SUPER excited when my wonderful hubby brought home a case of Sam Adams Octoberfest last night! And not because mommy needed her own bottle after dealing with the crazy antics of the little man all day! I LOVE LOVE LOVE cooking with beer!
Now I know, some of you are thinking “oh gross, I hate beer!”…. let me tell you…. my in laws don’t drink at all, they hate beer, but they LOVE my Oktoberfest Baked Chicken! You can not taste the beer—you get an unbelievably moist chicken with the fall flavor undertones of the beer. You’ll taste the hint of malt, pumpkin, caramel, and toffee…. it really is SUPER YUMMY and SUPER EASY!
Ingredients:
1 whole chicken
1 12oz Bottle Sam Adams Octoberfest
YEP- THAT’S IT—Just 2 ingredients!!
Directions:
Preheat oven to 350 degrees. Place chicken upside down in a deep baking dish (remove insides and neck of chicken).
Pour beer inside chicken and all over chicken.
Cover with aluminum foil and bake for recommended time for your size chicken…. on average about an hour or 20 minutes per pound. Remove aluminum foil and flip chicken right side up… cook an additional 10-15 minutes or until you have a nice golden color on top. Remove from oven and let it sit for 5-8 minutes before slicing—this will allow the juices to settle and will keep your chicken VERY moist!
NOW.... DON'T THROW AWAY THE CHICKEN AFTER YOU EAT IT!!!
