Discovering NC–Red Wolf Farms Pumpkin Patch

So there are pumpkin patches and corn mazes and apple picking farms and all sorts of fun fall stuff ALL over the place up here!  I’ve seen at least 6 or 7 different pumpkin patch farms and decided to just close my eyes and pick one…. let me just say…. I picked a WINNER!!!

Red Wolf Farms is located in Maiden NC… about 45 minutes from Charlotte.  So yes… you drive WAY out into the country…. never having gone pumpkin picking before I wasn’t sure what to expect.  My husband was a little weary of driving all the way out to “the boondocks”

So, yesterday I shared with you my SUPER YUMMY Oktoberfest Baked Chicken…. well I hope you didn’t throw out the leftovers yet!  I’m going to share with you my SUPER EASY recipe for making homemade chicken broth—or stock—whatever you call it. :) I’ve always just bought the Swanson Chicken Broth until I realized how easy and how much better it is to make your own!

The great thing about making your own chicken broth is that YOU control what goes in it!  Do you realize how much sodium is in the stuff you buy at the grocery store!  You know me… I am NOT into slaving over the stove for hours on end BUT I do want to help my family (and you) eat healthier.  So, I’m going to share how to make DELICIOUS chicken broth overnight with the crock pot.

Oktoberfest Baked Chicken Recipe–EASY MEAL

  I LOVE October and it’s not just because it’s the month I married the LOVE of my life, or had my precious little man…. it’s because it’s the only time of year you can get Sam Adams Octoberfest.  
Okay, those aren’t the only reasons I love October—I mean, the weather is usually pretty perfect, my Fall clothes are my most adorable I must say, the colors are gorgeous, and it’s the BEST time to be outdoors!
But, I was SUPER excited when my wonderful hubby brought home a case of Sam Adams Octoberfest last night!  And not because mommy needed her own bottle after dealing with the crazy antics of the little man all day!  I LOVE LOVE LOVE cooking with beer! 
Now I know, some of you are thinking “oh gross, I hate beer!”…. let me tell you…. my in laws don’t drink at all, they hate beer, but they LOVE my Oktoberfest Baked Chicken!  You can not taste the beer—you get an unbelievably moist chicken with the fall flavor undertones of the beer.  You’ll taste the hint of malt, pumpkin, caramel, and toffee…. it really is SUPER YUMMY and SUPER EASY!

Two Bits Tuesday—Linky Parties

I’ve decided to start a new series on Tuesdays call Two Bits Tuesdays.  Basically it’s me spouting off about whatever I feel like!   It’s meant to be a time where we can discuss all sorts of issues/thoughts/random questions/silliness….. whatever mood strikes. 
By all means…. if you have something you’d like to see discussed on Two Bits Tuesday send me an email…. I want Two Bits Tuesdays to be really interactive and give everyone a chance to put in their Two Bits!
So, the first edition of Two Bits Tuesday is going to center around Linky Parties…. 

Why on earth are linky parties not held on the day they claim to be held on?

Take for example, Manic Monday. I started off having Manic Monday on a Monday but then in an intense surge of imaginary peer pressure I changed it to begin on Sunday. Why you ask? Well, because everyone else was doing it—so I thought I needed to do it too. But really…. what’s the point? Tastefully Tuesday* should begin on Tuesday not Monday—Monday is for Manic Monday. Whimsical Wednesday* should begin on Wednesday not Tuesday…that’s Tastefully Tuesday’s day. Point being—why start it a day early—it really just throws me off in remembering what day it is!
Are bloggers thinking that by starting Fabulous Friday* on Thursday is going to give them the jump on people linking up?  In my experience the same number of people link up on whatever day because if they like your party they are going to come and link up…. so why all the confusion?
(*These are not names of actual linky parties….and if they are- I’m sorry I’m really not calling you out).

So, from now on I am no longer participating in this weird ritual and Manic Monday will begin on MONDAYS!   If you missed this week’s Manic Monday…. make sure you stop in and link up!
